  The problem is because Gcc doesn't know where to find the AS for 68k.
Assuming you have built and installed the cross-binutils, you just need to
add $prefix/bin to your path.  If you didn't specify a prefix in the 
configure command for your cross binutils, it defaults to /usr/local, so
you'd try a command such as

export PATH=${PATH}:/usr/local/bin
