In XSL-FO, you can do some switching.  A page-master defines a page layout
in XSL-FO, which can include page size and the number of columns.  A given
page sequence can use more than one page-master.  But your choices for
assigning page masters within a page sequence are limited: first page in the
sequence, odd numbered, even numbered, or generated blank last page.

Also, a document can have more than one page sequence, each using its own
set of page-masters. In DocBook, there are page sequences for book title
pages, TOCs, frontmatter, body, backmatter, and index.  You can create your
own with customization.

So you can switch, but you have limited control.
