Well, I'm a bit "partial" here, but why not get the best of both worlds ?
at least, until fop+... get more mature
DocBook + DB2LaTeX (http://sourceforge.net/projects/db2latex)
By adding a XSL customization layer you can get almost everything.

ps: Please get the CVS snapshot and see the sample directory. The
"releases are out of date.
ps2/ You will see in the docs things like
<mathelement><maththeorem id===
<latex><![CDATA[
\begin{equation}

]]></latex>
Please note that this is not DocBook. I extended the DTD for my own
purposes, but they are not part of DocBook.
