Did you try the 'baud' command? I just tried it, using a
version I recently built, and it seemed to work fine:
RedBoot> bau
Baud rate = 38400
RedBoot> bau -b 115200
Baud rate will be changed to 115200 - update your settings
Switched terminal to run at 115200 here
Baud rate changed to 115200 - continue (y/n)? y
Update RedBoot non-volatile configuration - continue (y/n)? n
