well you have
<xsl:apply-templates select="@*|node()"/>
so templates will be applied to attribute nodes.
the default template for attributes is
<xsl:template match="text()|@*">
<xsl:value-of select="."/>
</xsl:template>
which converts attribute nodes to their string value....
