First of all thank you very much for your answer!!!!!!!!!!
It nearly works now. The only problem left is, in my result file, the entries double.
This is the output I get:
<texteintrag>
<MAT matid="67909d899">
<Fundstelle>
<Band>1</Band>
<Lektion>1</Lektion>
<AbsolutePos>1</AbsolutePos>
<IndividPos>128</IndividPos>
</Fundstelle>
</MAT>
<LO loid="67909d899.FR01" lan="FR" >
<MES>lEÇON#,!!!!!!!!!!!!!!!!!!!!!!!Leçon 1</MES>
<ME>Leçon 1</ME>
</LO>
</texteintrag>
<MAT matid="67909d899">
<Fundstelle>
<Band>1</Band>
<Lektion>1</Lektion>
<AbsolutePos>1</AbsolutePos>
<IndividPos>128</IndividPos>
</Fundstelle>
</MAT>
<LO loid="67909d899.FR01" lan="FR">
<MES>lEÇON#,!!!!!!!!!!!!!!!!!!!!!!!Leçon 1</MES>
<ME>Leçon 1</ME>
</LO>
This is my xslt:
<xsl:template match="entry[not(MAT/Fundstelle/UbNummer)]">
<texteintrag>
<xsl:apply-templates/>
</texteintrag>
<xsl:apply-templates/>
</xsl:template>
<xsl:template match="@*|node()">
<xsl:copy>
<xsl:apply-templates select="@*|node()"/>
</xsl:copy>
</xsl:template>
</xsl:stylesheet>

Since you are using the identity transformation, you will be
copying all text nodes through to the output, including the
ones that were used for indenting the source. You might want
to experiment and see if indent="no" works better for you.

<xsl:template match="entry[not(MAT/Fundstelle/UbNummer)]">
<texteintrag>
<xsl:apply-templates/>
</texteintrag>
<xsl:apply-templates/>
</xsl:template>
