the Cygwin-X entries in the Menu are created by the
script:

 /etc/postinstall/xinit.sh{.done}

It belongs to the package
$ cygcheck -f /etc/postinstall/xinit.sh
xinit-1.3.4-14

You can run it again by the cygwin terminal.
