Huh?  As expected, it's working.

  $ cat /etc/fstab
  none /mnt cygdrive binary,posix=0,user 0 0
  $ mount
  C:/cygwin/bin on /usr/bin type ntfs (binary,auto)
  C:/cygwin/lib on /usr/lib type ntfs (binary,auto)
  C:/cygwin on / type ntfs (binary,auto)
  C: on /mnt/c type ntfs (binary,posix=0,user,noumount,auto)
  $ sed -ie 's#/mnt#/#' /etc/fstab
  $ cat /etc/fstab
  none / cygdrive binary,posix=0,user 0 0
  $ mount -a
  $ mount
  C:/cygwin/bin on /usr/bin type ntfs (binary,auto)
  C:/cygwin/lib on /usr/lib type ntfs (binary,auto)
  C:/cygwin on / type ntfs (binary,auto)
  C: on /c type ntfs (binary,posix=0,user,noumount,auto)
  D: on /d type vfat (binary,posix=0,user,noumount,auto)
  Y: on /y type nfs (binary,posix=0,user,noumount,auto)

So, did you call `mount -a' after changing /etc/fstab, or,
alternatively, stop all Cygwin processes and restart them?
